DAVID LAY’S JOURNEY
At Kitchens for Good, transformation starts with opportunity, and David Lay is a powerful example of what happens when that opportunity is met with hard work and determination.
Today, Chef David is part of Oceanside’s newest concept, Kettle on Coast, following roles at acclaimed restaurants like Michelin Bib Gourmand–recognized Kettner Exchange, where he served as chef de cuisine, and Juniper & Ivy as chef de partie.

Before joining the culinary field, David was pursuing a music career. When that path proved unstable, he took a restaurant job and started in the dish pit. It was there that he discovered a new passion.
“I ended up falling in love with cooking because it felt a lot like making music,” David shares. “There’s the same combination of hard work, creativity, and immediate feedback.”
Looking to build a more sustainable future, David joined Kitchens for Good as an apprentice, which was an experience that helped him take the next step forward.
“My time in the program gave me the support and push I needed to take a chance on myself,” he says. “It helped me step outside of my comfort zone and go after opportunities I didn’t feel fully ready for.”
Through hands-on training and mentorship, David built both his skill set and his confidence, which he now uses every day in his culinary career.
Today, he’s helping develop a new concept in his hometown, bringing creativity, discipline, and leadership into the kitchen. His background deeply influences his approach to food in music.
“I think in terms of balance, rhythm, and layering,” he explains. “I build dishes the same way I would a track—creating depth, contrast, and moments that stand out.”

His advice to others considering the program?
“Stay consistent and don’t wait until you feel ready, because you probably never will. A lot of growth comes from stepping into things before you feel fully prepared.”
